BISCOFF APPLE OAT CAKES

If you're on a health kick, that doesn't mean you have to miss out on tasty treats! Try this super easy, high protein oat muffin for your afternoon tea snack...


INGREDIENTS

100g oats

100g Ísey Skyr baked apple yogurt

2 large eggs

1/2 apple (I use pink lady for sweetness and gooeyness, if you prefer more of a bite you could use Granny Smith)

2tsp light brown sugar

50g white chocolate chips

3tsp Caramelised biscuit spread (I used Aldi's own brand but Lotus biscoff or another alternative can be used)


METHOD

  • Preheat oven to 180 (fan assisted)

  • Finely grate half an apple and add to a hot frying pan

  • Add 2tsp light brown sugar to the apples and stir until it makes a jammy texture

  • In a mixing bowl, mix oats, yogurt and eggs

  • once well mixed, add 2tsp of caramelise biscuit spread, your jammy apples and white choc chips (save a few for decoration)

  • distribute the mixture evenly into 6 muffin casings

  • bake for around 20mins, do the stick test to check the cakes are cooked through

  • once cooked remove from oven

  • melt 1tsp of caramelised biscuit spread and drizzle on top of the cakes while still warm

  • decorate with a couple of white choc chips

  • and enjoy!

These delicious bites are just 169 calories and have over 6g of protein in each cake!

You could easily switch up the ingredients too - vanilla yogurt and banana, pumpkin spice... the options are limitless!
